Purpose

Assist the Chef Unit Manager/Unit Manager for University Housing and Dining (UHD) in managing weekly and daily product ordering utilizing the food management software system for food preparation, commissary, grab-and-go, catering, and bakery. Manages weekly production run, inventory, and food/labor costs. Assists in managing the operation of a large commissary and production kitchen, including training personnel in food safety, assisting with managing storage locations, and communicating with culinary team on essential business objectives.

Required Qualifications
  • Responsible for managing FoodPro (food management system) and completing the following: product updates, inventory book management, invoices, product ordering, and weekly inventory analysis. Checks product inventory in all areas daily. Separates weekly production run for each department/serving line and completes daily usage reports. Manage food costs through inventory and cost of goods. Assist manager in financial reporting and provide necessary data.

  • Responsible for ensuring that daily orders are received and accurate. Reconcile orders/ transfers and ensure that they are properly processed or submitted in a timely manner. Anticipate and identify issues and areas of improvement and produce viable and logical solutions.

  • Ensure that coolers, freezers, and storage areas are maintained properly, and the product is stored correctly in accordance with health codes. Ensure all UHD and University policies and procedures are followed. Maintain safety and sanitation standards.

  • Provide direction, coaching, and evaluation to dining staff. Assist in developing effective working relationships and positively influencing and motivating staff. Work as a team member and promote systems thinking in a dynamic environment. During critical times or shift change, support the team by covering floor operations or assisting with culinary as needed.

  • Assist chefs with production of special events or catering during peak times. Assist in administrative duties and other duties as assigned. Follow all UHD policies and procedures as outlined in the guidelines for dining employees.

Required Qualifications
  • High school graduation or GED.

  • At least 7 years of experience in food preparation in a restaurant, commercial, or institutional facility.

  • Ability to complete and maintain University Housing and Dining Food SafetyTraining and or ServSafe Manager and Allergen Certification.

Relevant education and experience may be substituted as appropriate.

Preferred Qualifications
  • At least 3 years of experience as an Executive Sous Chef preparing a variety of gourmet, regional, and ethnic cuisine in a large commercial high volume food court or restaurant environment.

  • At least 2 years of experience ordering and managing purchasing for multi-unit operations.

  • At least 2 years of experience ordering and managing an inventory system.

  • At least 2 years of experience managing food costs and financial reporting.

  • Experience in managing, supervising, training, directing, and evaluating a staff of at least 15.

  • Experience with managing catering BEO's (banquet event orders).

  • Experience working with food management or inventory systems.

  • Comfortable with Microsoft Word and Excel.

  • Familiar with timekeeping and employee payroll.

  • Bilingual in Spanish and English.

Salary Range

$57,000+ depending on qualifications
